chicken thighs
75 g of Paris mushrooms, cleaned and thinly sliced
1
tsp. Coffee sesame oil
1
onion, peeled and finely chopped
1
small piece of approximately 2 to 3 cm
fresh ginger, peeled and finely chopped

stalk lemongrass, crushed
50g long grain rice

tsp. tablespoons of peanut oil

small white onions, peeled, cut into pieces 5
cm strips

and freshly ground black pepper
Preparation Chinese food chicken mushroom soup
Remove
skin from chicken; degrease it. Cut each thigh. Book.
Heat
the peanut oil and sesame oil in a large saucepan. Add the onion into strips
and let it simmer for 10 minutes until tender without changing color.
Add
the finely chopped ginger and cook about 30 seconds, stirring constantly to
prevent it sticks.
Pour
the broth. Add the chicken pieces and lemongrass. Cover and simmer 15 minutes.
Add the rice and cook for 15 minutes, until the chicken is cooked.
Remove
chicken from pan. Once it is cool enough to handle it, expand it into thin
strips, then put it back in the pan with the mushrooms, spring onions, soy
sauce and sherry.
Simmer
5 minutes until the rice and mushrooms are tender. Take lemongrass.
Season
the soup to your liking and serve immediately.

Cheese Rice Mold Preparation
Cook
rice according to package directions. Chop the parsley and onions very fine.
Mix all of the ingredients together and pour into a well oiled ring mold. Let
stand for 30 minutes. Bake in a preheated 325 degree F. oven for 35 minutes.
Turn out onto a hot platter and fill the center with creamed shrimp and hard
cooked eggs. Serve at once.

Tofu Preparation
Cut
the tofu in 1/2 inch cubes and deep fry in hot oil for 30 sec. Remove Tofu and
drain off all but 3 tablespoons oil. Reheat and fry the pork well, add Garlic,
hot bean paste, soy sauce, salt, soup stock, and tofu. Boil 3 minutes. Mix
cornstarch and water to make a paste, then add to mixture to thicken. Toss in
chopped green onion and sesame oil. Put on a plate and sprinkle with brown
peppercorn and serve with rice.
